welp i let it get to normal temp which is around 195 when the thermo opens... i left the rad cap off. when it got to 195 or so the water started to gush out of the radiator then it went down real low... so i filled it back up and it sat for a few seconds with the water at the brim then it started to pusha bunch more water out of the rad... what the hell..

Sound to me like a blown head gasket. You are pushing compression past you gasket into the coolant, causing excess pressure...that is why it is pushing it out. You are getting hot beacuse it is making air pockets. You probably warped you head when you overheated it to like 280*

Warped head sounds like the right answer. I've been there, let it go too far and warped the deck surfae of the block.
Didn't figure that out til I wasted my time milling the heads only to overheat again. If you do head gaskets \, make sure you check the block since your motor has overheated so many times.

I've warped a head on a 2.3 L, but it'd be the same process for a 5.0 or whatever, take the motor out, strip it down, detach the heads from the block, send them both to either a good machine shop (make sure they're reliable and reputable) or a motor builder (also check with guys to make sure he's reliable, reputable) and get them to plane the heads down a tiny bit, just tell them they're warped. Get the motor back, put new gaskets in it (or get the builder to do it) and voila. You'll be set that way for sure if it is the head gasket. I don't know of a cheaper way. If you've warped the head you may keep blowing the gaskets until something more serious happens... at least from my understanding.
The advantage of this is if you're motor was stock you'll give it a tiny bit more kick after this as well...

It sounds to me like your t-stat is not opening! I dont care if it is new or not! I have put many in that were bad from the box! When the car gets up to temp check the upper and lower hoses! both of the hoses should be so hot you cant touch them! If one of them is cool to the touch the t-stat is not opening! I would check that first! Not to say that you didnt blow a head gasket when it did get hot but the t-stat could still be your problem! The coolant bublling out is probaboly because it is boiling inside the motor!
