Default QUESTION

I recently replaced headgaskets on my car. Its been a couple weeks its been fine ive drove it on a couple 80 mile trips had no problems havent really beat on it at all, Its a 306 with gt40 heads f cam mass air edelbrock intake and last night i had the same symptoms start again, i got out of work and drove it home. i live like a block from my work not even enough time for it to warm up, i got out and smelled coolant and it was pouring out of the overflow tank, so this morning i topped off the coolant and let it burp, drove to work and the temp gauge went from 140 to 220 instantly when i pulled in the parking lot, 2 mins later went back to normal 180 i shut it down and the upper radiator hose was rock hard no leaks though, on the way home the temp gauge did the same thing and it started to smoke white smoke, but still ran fine. i had the heads milled and cleaned the machine shop said they had a slip warp but not bad, i used fel pro gaskets arp head bolt tourqued them down right, anyone have any insight on whats going on? it still runs fine,
what could be wrong? is the block warped? i need some help, im going to tear it down again but im outta ideas of whats wrong

its real weird. i start it and then it starts to warm up i turn the fan on and then it goes from like 160 to 220 instanly and then it will come back down to 180 and stay like that, no leaks or drivability problems
