Its fine, to plug them that is, i wouldent reccomend leaving them open as you will loose oil and it will smell horrible, here read this article I followed it and it worked fine.

50resto.com has the plugs for the back of the heads. They are loctited slugs that screw into those holes, we ordered them for my 67 5.0 build. I will look for them and add a link.
