Weird Stalling Issue

Weird Stalling Issue
Hey guys I have an ongoing issue that I thought I had resolved.... basically what was happening is when I my radio, headlights, and blowers on the voltage meter would bob up and down with the idle synchronized perfectly. I was coming up to a stop light a few times (with a few things on), pushed the clutch and brake pedal and the car just shut off (this happened more than once). It seemed to not do it when I didn't have anything extra on.
I replaced the alternator from the POS 2G to the 3G with all the necessary upgraded wiring, as well as set the base idle SLIGHTLY higher (I also have an IAC adjustment screw on a car with stock cams and heads). Everything seemed fixed, but I have noticed that a few times when I push the clutch in, the RPMS would drop down to 750-600 FAST. Usually when I push the clutch in, it will stay above 1,100 then slowly go down once I get to a complete stop.
My theory is get rid of the IAC adjustment plate since I don't have cams and heads (but everything else up to that point), and toss the BWD IAC and put a Motorcraft IAC in....
What do you guys think? Could this be my issue or am I about to waste 75 bucks?

There are no codes at all, all of the vacuum lines are new and are good, and the MAF is also still pretty new and clean. My buddy was telling me that it could be a offset coast setting on the computer. I'm not sure if our cars are set up like that, and keep in mind he has an Eagle Talon TSI. I suspect the idle plate needs to come off, and the base idle needs to be bumped up a little, but then again why does it only do it some times? We were turning into a Shell station the other day and it just stalled without any notice at all. No sputtering or anything, just died. It will always start right back up though.
