The MSD produces a bigger spark so you get a better combustion so you will see a difference but it will be minimal. Good upgrade to your ignition system i have one and it works great

I've also looked into this coil. I'm just wondering if it's worth it on a near stock 5.0 like mine. is it?

It helps, I noticed alot better Throttle response with the MSD 6AL bos, Wires, and Coil. You will prolly get a lil better Gas milage with the Msd Coil

I don't see how just coil with high voltage output would help on a pretty much stock car. The most voltage that your spark plug is going to put out is 15kv. Your plugs are going to put out the same amount of voltage weather you have a 40kv coil or 48kv coil. The 48kv coil would be able to recharge better at higher rpms (6k and ^) because of its stonger magnetic field.
