almost all cars are different in the way they respond to the way you let out the clutch, so its basiclaly just adjusting and getting used to what the car likes, When you you let it out, when you feel it start to catch give a little gas and hesitate for a second on the clutch, then continue to gently let it out... Best i can really do to describe it

And yes there are, the fox mustangs from 89-93 are all EFI with mass air meters (personally think these are the best, and have the best support by the after market) The 94-95 also have a 5.0 in it (the body style after the fox) Another car to look at is the 2000-2004 gt, they are fun cars also, and get decent gasmilage, usually running right around $10,000

my fox had 195k when i sold it to my brothers friend and it ran fine althou the chain was getting loose and it was running a little rich but it still pulled like a mule he stripped it and rebuilt it and is racing it somewhere in upstate NY

you can find mint foxs for well under 10 grand if the car has been taken care of those truck motors will last
