Default Fan Clutch

So how does a fan clutch work on an 88' GT? Is there some kind of wiring that kicks it on, etc.? My car has been changed to carb and all the wiring is shredded. I am overheating and have replaced a lot of parts, including the fan clutch, but I don't understand what makes it kick on to know if it is working correctly.

Thanks!!!!
