Mine was set to 'sport' before I even got it off of the lot and hasn't seen either of the other two modes since.

That's only available on the 2012 model year, the 2011s didn't have any steering options available to it unfortunately.

Is the steering feel of "sport mode" in the set up different than that on "advance track sport mode"?

OK so to resurrect this ollllld thread.. I have had a 2011 GT, a 2013 Boss, and I just bought a BASE 2015 GT Performance Pack car.. the 2015's have a button that controls the steering settings, and then the traction control button.. I know how to turn the traction control on/off, how to turn the advancetrac on/off, and I just learned that if you push the button twice I get to the sport mode... after reading this thread, does anyone know if the "sport mode" on the 2015's affects the steering since the button/control for the steering is separate now?? And I was also curious if the setting changes for the sport mode on the 2015's is the same as previous years?
