Ok, so I'm completely new to the audio world...and I'm trying to decide onone 12' alpine type s sub or two--I don't need it to be insanely loud--just good quality. What should I do?

One can get just as loud if not louder than two. All depends on how the enclosure is configured, if it matches the subs optimal performance specs (sealed vs ported vs bandpass, etc) and how much power you run to it.

How much are you spending on this Type-S? And what amp do you have or do you plan on running it with?

first off what kinda stang do you have? i have an 04 gt with a single 10...the amp and subwoofer set up basically takes up my whole trunk...if you wanna put a sub in you wont have a trunk anymore basically.
