Your answering your own question... sorta.

A decent enclosure to have someone build it for you should cost around $200 alone.

Are you sure its a MTX CVR or do you mean a Kicker Comp-VR aka CVR...The MTX 15" is 600w @ 4ohms rms so Id suggest a JL A1800 mono amp, 640w @ 4ohms rms. If you wanted to save money and go off brand, not undermining their quality, check out MA Audio's HK2000D. Its got 750w @ 4ohm rms, more than plenty to power the MTX CVR. Elemental Designs has an amp, NINe.2x two channel but bridged and you can get 600w @ 4ohm rms..just enough to power the MTX. With that amp I might suggest a capacitor to prevent headlight/dashboard dimming. As far as headunits, get a new one rather than keeping it factory. Better sound quality out of your exsisting speakers and also more manual settings for your subs and what not to shape the sound you want. Aftermarket HU's have preamp outs too so you can run RCA's to your amp for clear sound.

Yea, its about 100watts rms more than you need but you can lower the gain on the amp so you dont put too much power to the sub. Also, caps really arent needed. They add a nice touch of neon sometimes, depending on what you like, help reduce dimming, and also kinda clear out the signal but chances are you wouldnt notice the difference in sound quality with or without one.
