289 power?

289 power?
I'm literally maybe a day or two away from dropping some cash on a 66 Coupe with a numbers matching 289 2V. Its in relatively good shape but I want to rebuild this girl from the ground up.
I want to keep the origional block, but I'm thinkin just about everything else is gonna need some updating. Most of my experience with fords is with SOHC modular motors in my 03 GT, 01 GT and 2000 f150. I've worked sparingly on an EFI 351 on my old Bronco. So forigve me not knowing too much about these older motors.
I'm wondering, with a re-freshed block (hot tanked and the whole 9 yards), a mild stroker kit, all new heads/intake/cam/carb, along with a new exhaust, what type of rear wheel horse power am I realistically going to be looking at out of a naturally aspirated setup? This is likely going to be at least a two year project for me so I'm in no rush, but I'm wondering what a street-able NA build will yeild on a 289.

you could get a good 310 out of it easily with a lopey cam and some heads and intake/carb setup.. you wont be dissapointed.. now it will take a bit more cash to get it ride more like the 03 you have.. but again its a classic mustang.. you'l be happy.

exactly. Not looking for too much power really. I just want a nice classic with some ***** to back it up. I'd probably have to turbocharge the 289 to get the type of power i'm getting out of my 2003 haha, but thats not what this project is about.
