Heh... I have a number of engines I would do. Some I am working on, others I would never have a use for them if I built them since I cant race much anymore. Regardless, here are some of my ideas. Keep in mind I tend to build street engines and run them on home brew ethanol, and I can squeeze that stuff a whole bunch and make stupid power on it without any pings, rattles or explosions. I wont get into specifics on each build, just general stuff since most here are unfamiliar with non Fords, and sometimes Clevelands.
I'll start with the Fords since you guys are into them. Small to large.
302, stroked to 347 with domes and small chamber AFR185s for about 14:1, mild roller cam that makes all its power under 6000 rpm with a nice thick torque curve that is as flat as I can get it, probably around a 220/224 with a bit over .500 lift. Then stuff it in my F150.
NA 351C. 70-71 closed chamber heads modified for adjustable rockers, 4.00" stroke forged crank and balanced forged everything else, maybe a little bit of custom shaped dome. Offy dual port intake, and an MSD ignition. With the aftermarket block if it ever gets done.
Stuffed 351C. Same as above but with 73-74 open chamber heads, a small dish in the blower pistons, and two hair dryers blowing through an EFI intake. Then stuff it in the Pit of Despair with a road race style suspension under it, and possibly an IRS out back. Completely stupid fast car built out of a heap of crap.
Take both 351Cs and turn them into aluminum 514s or FE based strokers, what to put those monsters in I dunno... T bucket? Lightning McQueen replica? Thunderbolt replica? Whatever it is the only place you could open it up would be Bonneville.
Pontiac:
400 with a stock stroke but with forged crank, rods, and pistons for 406ci. Heavily ported Ram Air V heads, google them if you dont know, with two hair dryers on it in a 71 Ventura that looks like Grandma forgot it in the lot.
Aftermarket block, forged or billet 4.7" crank, 4.350 bore for 558ci, heavily worked Tiger heads (again google them) with EFI and two hair dryers with around 28psi. For reference, a 482ci version of the same engine with Edelbrock heads like I have on my Pontiac drag car that flow almost 100cfm less than the Tigers made 2880hp and 2700ftlbs at 6500rpm. Call this Pontiac "Death on a stick" and stuff it in something that can handle the power, like a Pro Stock chassis with headlights. Try not to break the Lenco 5 speed.
My daily driver this summer or next will be a 14:1 Pontiac 400 stroked to 467 with a light weight crank, rods and pistons, near stock iron heads and a mild cam with a tight LSA that maximizes cylinder pressure, with a Th350 or Th400 behind it, and 2.73 or 2.41 gears in a lightened Trans Am or early Formula sporting a modified suspension. Making a bit over 500hp under 5500rpm with the drivability of EFI added to the mix should be a seriously fun car that is good on fuel as long as I can stay out of it. Cant build this and run pump gas, so unless you are into the mega power and cool operation of the yeast pee, it wont be working out well for you if you build any of these.

I would probably build a 4.6L DOHC, forged crank, Manley rods, Mahle pistons (10.5:1 compression), Eaton blower, a few other goodies to make it last, and put it in a 65 coupe. Oh - that's the dream engine I built. 500 HP is plenty for these little cars, but 600 HP is within pretty easy reach with a ported Eaton, and with Whipples or Kenne Bells, 700 HP is very doable. (But the 'unlimited budget' thing is certainly helpful for mod motors!) Small motor, big power, 20 MPG - that's the ticket for me.
