Default Carb Question

I'm putting back together my 67 289 engine after head gasket blew due to a freeze plug that sprung a leak. It has been sitting for a few years and I'm finally getting to it. The head gasket went bad between cylinders 5 and 6. So there was no mixing of the oil and coolant. Had the heads and valves machined and converted for unleaded gas. I have not done any modifications to the bottom part of the engine such as cam, so it is basically stock. I did pull off the oil pan and there wasn't much crud in the bottom and I replaced the oil pan gaskets. I had put in a rebuilt engine a few thousand miles before the head gasket went. The only other things I've done is get a pertronix electronic ingnition conversion and converted it to dual exhaust with regular exaust manifolds no headers.

This is the question I bought a new intake manifold edelbrock 2121 see below. and a edelbrock carb 1403 500cfm (see below) and a circular air filter housing for the top of the carb (not sure if that is the right name). I have not put them on yet. A friend of mine has a new in the box edelbrock carb # 1407 (see below) with 750 cfm that he wants to sell me. When I spoke to someone from edelbrock they said that the 1407 with 750 cfm is too much carb for my engine and it would be a problem.

Does anyone have any experience or opinion about using the 1407 carb or other advice? I just signed up for the forum yesterday and I'm hoping some of my stang brethren can help me out. Also I ordered the book How to Rebuild Small-Block Ford Engines that someone else on the forum recomended and bought a timing light on ebay.

The coolant fluid looked pretty good and I did not check yet to see if my gas tank has a drain. So I'm not sure if I need to drain the gas tank, I do have a new fuel filter.

Hey, Doc Bob... Welcome to the classic section of MF. Yeah, with a stock 289, you won't need any more than the 500 CFM carburetor. The guys who advised you are right. 650 is way too much carb. The Motorcraft 4100 4V carb that Ford put on their stock V8 A Code cars was only 470 CFM.

I replaced my 2V manifold with a 4V manifold and put an Edlebrock 600FM on there. Works great !

Sure it does, but can you get just as good or better performance from a carb that is designed for your engine? I think so....
