Carb Jetting issue
While the motor is running and giving it throttle, only one of the jetts sprays gas. A shop I talked to estimated $500 to take a look and get it cleaned out.
Is there anything I can do to get the jet cleaned out on my own?

Just do it yourself.
Im going to assume the carb is on the new side and the rubber gaskets and such are new. If this isnt the case go to napa or some place and buy a rebuild kit for it before you start. (you might want one anyhow)
Just take the carb off the intake and find a nice open place to work. If only one jet is working its probably because the other has dirt in it, as you start to disassemble it lay the parts out as they come off in nice rows so its easy to see how they fit.
There is nothing very complex about the inside of them but there are small parts and gaskets that can be lost or damaged so you do have to be careful once you get to the jet run a thin piece of wire through it to clean out the debris.
wash out the float bowls and anything else with dirt on them, then get a new fuel filter to go with it.
You should be okay with this job I give it a 3.5 out of 10 on difficulty, if you dont want to do it yourself find someone who wont stiff you for the repair (60-80 bucks is fair) thats the going rate to rekit a walbro 2 stroke carb

The jets on an Edelbrock (or any carb for that matter) do not shoot gas out, what you are talking is the accelerator pump squirter. Jets are not visible without taking the top of the carb off (on a Holley they are behind the float bowls). I would just pull the carb off and spray some carb cleaner in it and then hit it with a little bit of lightly compressed air. And yes $500 just to diagnose a carb problem is way beyond reasonable, it is borderline insane actually.
