Mystery Stalling 65 289 w/3spd Cruise-o-Matic
Have 65 Coupe, 289 Engine (new plugs, wires, cap etc...), carburetor just rebuilt. Runs great.
Problem is that when the engine is cold, it's stalling (completely dead) right as it would shift from 1st to 2nd.
If I leave it in Low Gear, no stall. I have no clue if this is engine related (I've done everything I can imagine) or if the transmission is locking up for some odd reason. Has anyone ever seen this? Which direction should I be looking in?

Does it do it when it is warm? If not then what does it do when it is warm?
Killing the engine on a shift is one of two things, provided it starts again and hasnt had some sort of failure.
Electrical issue that kills the ignition.
Something in the trans that is applying too many things at once and providing reverse. Trying to reverse the engine will stall it, simply locking the trans will not stall it unless a lock up converter is employed which you dont have.
My guess would be electrical.

When it's warm, everything's gravy. Run's like a champ! No hiccups or anything.
Usually only happens first thing in the morning, going from first to second.
If I pull the shifter down to low, or manual first gear, no problems. It's when I put it in drive and let it shift on it's own.

As best that I could see, the vaccum line to the tranny is metal, directly into the intake, so that looked ok.
Then, I looked underneath, and see something attached to the EGR valve, so I assumed it's ok.
The choke, is a spring model, with a line attached to the manifold, which looks fine.
It started acting up before I rebuilt the carb, and still does it since.
Now as far as whether or not the choke is properly adjusted, might be an issue...

No EGR valves on these dinosaurs. Try adjusting the choke. There are marks on the black plastic round thing that you can use for reference. I just put mine on full close at cold, and full open on hot engine.

Yup, I have your EXACT same problem. And I've been fiddling with the choke and seems to have it about right. I also have the same choke as you.
I think the spring in my choke has about had it and should be replaced, because although I seem to have it all adkusted properly now, she still acts up like that some mornings. But I can tell the choke is not closed all the way those mornings.
Keep fiddling with it, I had to open the black cover and make sure the spring was hooked to the lever properly as well.
Anyone know where to buy just the thermal spring?

Forgot to mention, if your choke is fully closed when cold, you should notice a significant increase in RPM. If the engine seems to be at the same speed as warm idle speed then your choke sure isn't closing on cold.
