Default Vacuum leak?

Hey guys, I could really use some help diagnosing a troublsome vacuum leak ( i think). Here is what's going on:
I have completed installing and tuning a new holley v4 street avenger. After tuning correctly and having my timing checked as well it was running great both cranking and running. However within 4-6 hours i noticed some really bad hesitation, even to the point it would almost choke itself out on take-off and I assumed a vacuum leak. After replacing a plug that looked a little bad, it again ran good. Now a day later same problem again. I replaced fuel lines, fuel filter, PCV line and fittings, and have checked with starter fluid for leaks and can't find any. Please advise I'm at a loss for the possible cause.

The only other thing i have noticed is, I have a spall 3/4 in. plate in between my intake manifold and my carb currently which had the plug that i was having all the problems with capping. Could this plate be the cause of the leak? It's a 20 dollar fix which i'm going to do tomorrow, i just hate that i can't drive this weekend and can't seem to figure this out. Any help would be greatly appriciated, thanks
