I'm running an Edelbrock 600CFM w/electric choke, although I kinda wish I had gone with a manual choke.

There is no "best" overall carb. If you want something to slap on a stock or mild small block, an Autolite 4100 is hard to beat. If you need more tuneability but don't want to be finicking with it all the time, Edelbrocks arevery easy to tune. For the most tuneability (at the cost of some reliability) the Holley design is probably better. I've heard that Barry Grant carbs(which use a Holley deisng)are amazing, but more expensive.

Im using the Street Avenger 570, dyno tuned and A/F mapped, had to change the jets to get a perfect result. Well worth the effort. Thats the idea of the Steet avenger, easy tuneability. If you want something to slap on that will run straight out of the box with no tuning - autolite 4100

Check and compare Holley vs. Barry Grant (Demon) on Jeg's,,,,, you mght be surprised,,,, last I looked, many (most or all) Demons were were cheaper than comparable Holleys.... matter of fact, I bought a couple of Mighty Demons,,,, they are nice... and they run good..

sorry to say, but demons are junk. in fact, demons are so tough to tune and so unreliable, that summit racing doesnt even stock them anymore. they had so many returns that the decided to get rid of demons all together.
