It's nota V6, unless it has been replaced. It is probably a 200 I6. Find a new auto store if they said a 303, if it's a V8 it might be a 302 but not a 303.

Since you're in Texas, no emission equipment is required on a 68, so you can just replace the thermo housing with on that does not have the provision for the vacuum switch (I believe that is what you are talking about). Of course, if you are restoring, you should put it back stock.

OK, it should be a 200 Inline 6, not a V-6.

The line on top of the housing should be normal plumbing and if I remember right it's part of the choke mechanism. A look online found part number K116A and I found this by searching for Ford Falcon instead of Mustang.

I have an I6 200ci without the hose/line from thermostat to carb. Here is a pic. You might be able to get a plug for that at the parts store or checkMustang parts online.

I was looking at my 67 shop manual for the I6. It shows some were equiped with a coolant heated spacer located between the carb and the manifold. Does yours have a spacer between the carb and manifold? or better yet do you have a picture of your carb setup? If you check out ebay, you might get a good deal on a shop manual which is invaluable for working on these classic cars...keep us posted on your repairs...
