Stock vs Custom
Why not be creative with the I6 and blow us v8 away with turbos etc!! not cheap but surely the lighter nature of the I6 will make it handle better and people will be more amazed with an I6 that beats v8.

Hey, I might've said to swap in the V-8 except that the OP mentioned "investment". Usually, the goal is to maximize the return on an investment. IMO, the cost of correctly swapping to a V-8 is going to be greater than the increase in value.
I sold my '65 GT coupe last year. I replaced the failed clutch for less than $200 in parts so that it ran again. Because it was a coupe, I didn't bother with the paint and body because I would've spent more than the car is worth. In most cases, these things have to be a labor of love as it is difficult to make a profit unless others are paying you to fix their cars and they are taking the loss. Even with a paid for rust-free '65 fastback, I had to put a pretty large chunk of change into it.
