Default Restoring a '68 Mustang

Howdy, y'all!

I'm a car enthusiast (Honda S2000 owner myself but I love American Muscle, too) from Texas and I was looking for a good site to find some information for my company's CEO (he doesn't really get online or browse forums, etc). He has a '68 Mustang that needs to be restored and hot-rodded. From what I was told it hasn't been run in something like 12 years, and he's interested in doing the whole shebang, which includes replacing the original engine.

I don't know much about that kind of stuff personally, but I was hoping y'all could maybe point me in the right direction? He's basically looking for the BEST, reputable shop(s) to do the work. Obviously he's willing to pony up the money for that kind of work. Any suggestions on who to contact? It doesn't necessarily have to be in Texas (my guess is that the best shops are in Cali, but hey, what do I know?)
