Norther twin Spal fan wiring?

If the fan will shut off at 180 degrees and you have a 192 (195?) degree thermostat, once the engine get up to temp and the fan turns on (at 200)--- the fan will never turn off will it? Would you be better off with a 180 degree thermostat?
