Weird noise, crossmember?
Its not going to cause any catastrophic failure or anything it will just be anoying. Could you see it touching when you crawled under the car or do you just notice it when you start moving. First thing I would check is the rubber mount between the crossmember and transmission. If its broken it will allow the transmission to move under load.
It's hard to tell if the mount is broken as the stock mount has rubber covering everything and often it flakes off. A poly mount like this one would keep it in place for about $30.00:

However, it is possible the bolts are simply loose. Those two allen heads that hold the mount to the tranny should be checked and then the two nuts on the mount studs that go through the crossmember. If they are tight, try jacking the tranny up slightly and see if the mount pulls apart.

Since I am really far from home (SF -> New Orleans) I cannot take it back right now to the guy who did the swap. I will do my best to find a mechanic here and have it fixed today.
Do you think that any kind of mechanic will be able to understand the problem and solve it?
Is there someone here by any chance that knows a place to go in New Orleans?

It looks like the rubber mount might be broken, but it is hard to say for sure.
Stuff like that bugs the hell out of me too, but if the tranny is rubbing somewhere it probably wont cause any big issues. Just try to avoid the things that cause the noise and address the issue once you get done with your trip to Memphis.
If my guess, a new mount may fix the issue, at least in the short term.
Whoever did you tranny swap fabbed up a pretty substantial tranny mount crossmenber.
Kind of "busy" in that area, might be something coming loose, lots of "connections" in a small area...

I found a random mechanic that had good reviews and dropped the car about two hours ago. He took a look and told me that there was something strange/wrong with the way the engine and the transmission were aligned. He grinded the transmission crossmember a little and made sure that the transmission would not be rubbing it again.
I took the car back, it seems to be fixed in 1st / 2nd gear : perfect
I can enjoy New Orleans for one day and I will take the road again tomorrow morning, the show must go on
