Many people do not realize just how much 300hp is at the rear wheels (400hp @ flywheel). If it is a streetable 300hp with torque peaking around 4000, it is enough power to snap apart the stock drive train...believe me . Lots of claims get thrown around, but if you play on dynos or at the track you see through the BS fast. 1/4 mile times and dynos do not lie. 200-225hp at the wheels of a light weight street car is very sporty, IMO.

Edit: You also have to think about horsepower vs. torque when considering what is fun to drive. Torque is what creates acceleration. Horsepower represents how wide the torque curve is. If you are running on the street, you do not really care about the width of the torque curve because you are only running in a narrow and low area of the curve. My engine makes a ton of torque, but the horsepower is not super impressive because I am not running a single plane intake and pushing the cam duration out to run the engine at 8000rpm. It is still a blast to drive and will pin you in the seat for as long as you want to hold the pedal down.

As said above, you're not going to see anything near 300 hp with that setup. You can get decent street power out of a 289 with some work. With a moderately modified 289, I'm putting down 230 rwhp and 250 ft-lbs torque. see https://mustangforums.com/forum/6666584-post13.html for what the engine has and the dyno sheet. The car is a blast to drive and gets off the line very quickly, smokes 2nd and chirps 3rd.

Still depends on your cam and flow thru the heads...

As Urban suggested, its the "torque" that gets it done. I will say that "4,000" ft/lbs of torque will turn a Yuke into a 12 second truck (Yeh I know its a typo). Now that would be a ride that you literally could crush the competition.

This is my first time ever posting anything on a forum, so I'm not sure I'm doing it right. I now own mylongvictors bumblecaat. I wish vic or someone that knows him would I'm me and tell me what exactly I have purchased with the bumblecaat.
