Default 65/66 Mustang Optimal Engine

I am considering a restomod on a 1965 or 1966 fastback. My intentions will be to use virtually all new components (with the exception of the body, of course). One of my considerations is the engine configuration. I would like to put as much power (HP and torque) as possible under the hood while still having a streetable vehicle. The car will NOT be for daily use, but rather weekend, taking the daughters for a drive, etc. While I definitely don't want to spend in an unlimited fashion, the budget is somewhat flexible and I am not too concerned with resale value.

So the question to the board is this: what would be the max hp/torque combination that you would consider to be streetable and are there particular engines/engine configurations that you think would be better than others (why/why not)?

Please note that going to a Mustang II front suspension and removing the shock towers is something with which I am fine.

How much do you have to spend and what experience do you have driving high powered cars?

For a weekend cruiser, it's hard to justify more than 250-300 HP. I'd start with a 5.0, you can modify the crap out of them to suit your needs. No need for the II suspension, there are better options.

67mustang - I would like to spend less than $15k, but imagine that won't be a problem as I think texasax is heading down the right path. There is definitely a law of diminishing returns in that i won't be racing, etc. As for experience, I have had cars with 400+ hp and torque and would like a bit more...the problem is that those cars may not be comparable in performance characteristics (e.g. BMW M3).

If starting from scratch... a 408w will provide the most power with best street ability, unless you step up to a coyote. But there is a big price difference between the two, and I prefer the sound and feel of the old school pushrod anyway.

Modified stock suspension, 347 stroker, can make 500hp and have it streetable. You'll have to learn how to handle it though, it sure as hell won't drive like some namby pamby M3. Even with exactly the same performance, a Classic will require a lot more skill to use said performance. Much less forgiving.

Can only speak from my own experience, which is this
I went with a Ford racing crate 306 with 340 horse and a T5 5 speed and 3:77 gears. This was in my 65 fastback, tuned and dyno at 291 HP at the wheels, 5k flawless miles with a carb before I sold it. Super reliable and very affordable, well less than 10k for both (complete drive train)

Now in the coupe I am going 351 based 434 with a keisler 5 speed (700 HP rating) Motor will prob be 550 or less, this is all in a 66 coupe with TCI suspension (no towers)
