Spacer Under Carb ?

The spacer won't do anything an a 6er either. Once you have power on a V8 engine you can use them to massage the power band a bit. There are almost half a dozen different spacer times, open, divided, 4 hole, combination etc. Some with tapers, some without.

I agree with dawson, slight increase in torque and perhaps better throttle response.

Are gaskets needed between the spacer and engine, and spacer and carb?

OK. Is it OK to use the one I have (made of some type metal) or should I use the phenolic one (plastic looking), or does it even matter?

Keep the carb cooler with phenolic...
