Replacing Carb on 351W

1969 Mustang Grande
Engine: 351W 2V
Carb: Original (if I recall correctly it was an Autolite 2100)

The carb is old and failing and I've been told before by a couple different mechanics that it needs to be rebuilt. I once rebuilt a carb on and old jeep back in college, it was a huge pain in the *** and I wound up with 2 or 3 extra pieces at the end so I'm not looking for a repeat of that experience -lol. Also, a big contributing factor here is that at the moment I currently live in Manhattan in a tiny apt so the car is stored in a parking deck, I don't have the luxury of a garage to work on it or even many tools beyond the basics. I have no experience working on carbs beyond that old jeep so I'm a novice with this.

Here are my questions:

1)How difficult is it to replace the whole thing? Is it simply a matter of unbolting the old one and bolting on the new one? What sort of trouble might I run into?
2)What would you replace it with? I'm looking primarily for something compatible that will be reliable and easy to setup and maintain.

Not that hard to remove and replace; spring, linkage, vacuum hoses and 4 nuts.
I think you can find a like replacement at most chain stores, but you might seek out a local carb shop for more experienced help. Or you can find a holley 2barrel, 500 cfm from online speedshops like summit or jegs.

Thanks. People with Holleys seem to love em, but I've heard they can be finicky to get tuned just right. Is that your experience as well or have you found them to be a snap to setup?

I only said holley since that is the only 2 barrel aftermarket that I know of. Each brand has their tuning tricks and I'm not a carb expert.
