Default Sniper throttle extender in 1968

Hi been lurking here trying to learn all I can. I finally have something I need to ask about my car. 1968 mustang, 289. Originally had a 2 barrel and was converted to a 4 barrel Holley at some point. The original owner did the threaded rod heim.joint thing to connect the stock throttle pedal to the Holley 4 barrel. I just did a motor rebuild and sniper EFI system. It runs great but like many others I find the intitial tip on tough. I installed the throttle extender bracket but the threaded rod heim.joint not will not work. Once I readjusted the length to reach the hole on the extender the gas pedal hits the floor and about 75 percent throttle.
