mainly because it is to much fuel for the amount the engine can burn at once. If you put a higher cfm carb in, like say a 700, in a little 289, that 289 will not be able to consume the fuel fast enough to keep up, and thus resulting in unburned fuel yada yada ya
GT289 is right. The bigger the carb (on a 289/302), the more sluggish it's going to perform. You need to wear the right size shoes for your feet, if you want to run your fastest!
If you get a carb thats to big then your engine is goin to flood (get too much fuel into the cylinders) the engine can only burn a certain amount of fuel and when you start getting too much fuel you start fowling sparkplugs and our car will start spittin black smoke out of the exhaust.
