Def go with a stroker kit, then you also retain the original strenght of the block.

max overbore on 5.0 motors is about .030", .040 would be pushing it due to the thin cylinder walls. go with no more than .030" and then stroke the crank some is the safer way to go for more HP.

max on a 302 is about 60 over, mine is bored 40 over and it runs fine
