Default help with temp

I have a 90 vert 5.0 5 spd. I just changed the water pump and fixed the leak. Here is my question, now my temp gauge ranges from like 1/4 to 3/4, never over heats but it seems like the gauge is always moving. The thermostat is not so old maybe 1 hr+, what could cause this, I changed the coolant but did a **** poor job of flushing the system. but i was in a rush. car has 196k and still very strong.

Please any suggestions?
