The 5.0L is actually a pretty light engine and a compact design. Any 5.0L/302 can run with either a carb or fuel injection...it just depends on the choice of the distributor and intake.
Whether it'll fit or not depends on how much room is left in the engine bay with the 2.3L in there. If the 2.3L is a tight fit...no way. If there's room on either side, it'll likely fit. Find a picture of the engine bay of a '75+ Mustang with a 2.3L engine to see how much more room is needed for the 5.0L.
