COOLING.....???

I recently installed a CSR electric water pump(30-37gph), and a Perma Cool 2950cfm electric fan (and is blowing air torward motor and runs constant). I was really excited to get in and feel the difference in HP and there was, but for some reason itwas running REALLY HOT! like 215-220 when it was running around 180-200 with the mechanically Eldelbroch water pump and the fan bolted to the waterpump pulley.. It does still have the stock radiator, is that my problem or do I maybe have an air pocket in the system? Is a aluminum radiator the answer?

after installing the water pump, i filled the radiator back up, then ran the car. after the fluid level went down i refilled it to top it off. But thats it. What is the correct way to burp it, or should I just run it by a shop and have them force the air bubble out? One of my buddies said to get another fan, but it just seems really odd that it wouldnt be running cooler or atleast the same operating temp as before the mods.
If I let the car idle from cold, it takes a good 35-45 min before it reaches temps. near 220. It was cool out today, so I took it for a drive on the freeway and it was staying at about 210-215, but anytime i would accelerate, the temp would jump up to near 220 really fast. You could watch the needle move up there quickly.
When I bought the car it was making approx. 375rwhp and stayed cool just find before I did the mods.
