Default 65 Fastback idle issue

I have a 65 fastback with a 289 and a C4 trany. I have restored the car frame up. Motor and trany are rebuilt. Car runs great till it gets hot. When it's hot I come to a stop and it will die. It starts right back up and away I can go till the next stop. Vacuum, fuel, and ignition is all good. Start it again after it's cold and everything works fine till it get hot. Any thoughts...

Does the RPM's just drop off and the engine dies or do they just slowly drop off until the engine stalls?

Can you save it with the gas pedal?

Is the tranny shifting out of 3rd or 2nd?

Is the idle adjustment on the carb correct?
I don't know what kind of carb you have but is there a stepped cam on the side that helps control idle speed at different temperatures?
