Default Eliminating Wiring under dash/engine bay

I am switching my 89 GT to carb and have already pulled the computer and harness for it and emissions.

My Question:

Can I get a new Fuse block and wiring and re-run my wiring under the dash and still wire in my Dash heat adjustments & fuel door/trunk button?

I am wanting to eliminate anything I don't need (cruise control/air bags & sensors/ I'm eliminating my convt. top controls/motor also, and anything else I can think of.

This car is a play toy to the extreme, I have a C4 and a 393W Stroker in the works and plans for a Turbo on that. So I want just what I need to stay on the street. Turn signals/wipers/horn/brake&headlights/interior light/radio and heat. along with the usual engine comp. fan/ignition.

Any help would be great.
