So hypothetically if I wanted a true dual exhaust - would I be able to achieve that w/out messing with the cats? I'd prefer not to cut/weld anything, so if I bought an O/R X or H pipe and 2 flow master 40 series mufflers and 3" chrome tips then had them fab the rest of the piping (from the x pipe to the mufflers)? Or would they have to cut the cats off when they put in a x or h pipe to get a TRUE dual exhaust?

if you have cats, they are located in the midpipe. if you have an off road midpipe, you have no cats. when you are ordering a midpipe, that is the time to figure out whether you want cats or not. that make sense?
Your confusing me when you say " located IN the midpipe". I thought the cats were in clear sight and not acutally inside the midpipe?

i'm not sure about anything pertaining to the 05's, but you can buy H pipes with cats in them if you wanted or needed cats to stay on your exhaust.

What would increase power in that setup? Adding an X or H pipe (without cats)?

no you would not have cats with that midpipe.

it would go headers->h-pipe->fabbed pipe->mufflers->tips

you can only go two routes, you cannot keep your cats if you replace your midpipe, therefore you can only do one of these:

1) midpipe WITH cats (that's the other picture I posted)
2) midpipe WITHOUT cats (off road midpipe - the one in the quote)

the cats and the midpipe are like feet (midpipe) and toes (cats). you can remove your feet, but you can't keep your toes, and you can remove your toes, but still have feet. in other words, you can have a foot but no toes, but you cannot have toes without feet. you need a midpipe, but to change it, you need to mess with the cats. I don't think you can do a v6 to duals without a midpipe. you should talk to somebody who has done what you want to do on an '05 v6, cause it's a little different than what the original poster was asking.
