Default RPMs and Air Conditioner

Its been hot here lately, and will be hot for a long time to come. So I have been running the AC in my 2005. Since the car is new to me I have noticed something. The engine seems to rev up and down about 500 RPM with the AC running. Is this fluctuation normal? Also, I find I have to give it a little more gas when taking off running MAX AC, else I risk stalling, I have stalled it a couple of times. Just wondering if this performance is normal?

I typically see about a 100-200 RPM jump when the compressor kicks on at idle but don't notice any issues with takeoffs when coming off the clutch. Perhaps you're not allowing enough time as you feather off the clutch.
