Sure, with enough money and know how you can do anything.

 

Cheaper to trade in for a GT. If I were to do an engine swap and had the 'money', I would go with a Ford 'crate' 427 .

Faster, cheaper, easier to just sell the V6 and by the V8 if that's what you want to do. Also, a swap like that will destroy the value of the car. Nobody wants a swapped car when they can just buy one that came from the factory that way.
