Default 351 Windsor

As a new member were supposed to post so here goes. I have a '67 fastback and am in the process of restoring. Originally had a 289 and was springtime yellow (horrible color) so I'm not going stock. I am thinking about putting in a 351W and am asking you guys for ideas on maximizing power but keeping it realistic for street driving as well. Stroke it? What options do I have? Anything helps. Thanks.
