look at the fittings, check the AN fitting in and out of the nitrous selonoid(s)

paste will start to turn brownish, and accumulate dust, tape will be be bright white and obvios cuz the ends will start to fray

w/ the bottle off and car off, arm the system and engage the nitrous, listen to how loud and defined the "click" is after the selonoid opens

Are you using a micro switch or a activation switch that works off the TPS?

If it's a micro activation switch that has the little arm that the throttle hits then check it.My nitrous did the exact same thing to me one time and that switch was broken keeping it activated. I had a window switch at the time as well. When I got to the activation point of the window switch the nitrous turned on and even when I let off the gas the micro switch was still activated and it still sprayed the nitrous because the rpms wouldn't drop below the shut off point of the window switch. I had to turn the ignition off. Then I unpluged all the coils and spun the motor over for a solid min. to get all the nitrous out of the motor.
