Currently I own a 08 Shelby Gt and my better half bought my Carroll Shelby's signature on the car part of my choosing
I was just wondering if anyone had any input on what would be an easy piece to remove and send in, or if anyone had done this to there Shelby

Try and read through this thread to get info about the airbag cover removal.
Now, getting your signature from Shelby can take up to 8 weeks (from what I've read), it might be easier to just email Shelby American and ask them about purchasing a metal dash plaque from them for your GT-H. The dash plaque replaces the sticker on your dash that has your vehicle vin number, and once you buy the metal dash plaque, you could have Shelby sign that.

I looked into this once upon a time... I was under the impression that Shelby doesn't want to sign airbag covers.
If I were you, I'd double check this before going to the trouble of removing the passenger air bag.

Yes, he will sign the airbag cover but you must remove the actual airbag from the backside or else they will send it back unsigned. A lot of people, including myself, purchase an extra cover and send it in so they can drive their car while waiting. Another popular place people have him sign is the mirror cover on the passenger visor.

He signed mine, and I think it really adds to the dash.
I bought a replacement dash insert and UPS it to have it signed.
OP, I still have the other dash piece in MINT condition. If you want it to have it signed, paypal me 100.00 (shipping included) and I will ship it to you tomorrow. It's going to cost you 179.00 or more from the dealer. PM me if interested.
After you have the extra panel signed, have it installed, then sell the spare panel as I am. You get your money back.

Not sure where you are getting your pricing, but these covers are not that expensive. The black one as an example is only $70 from Tousley. And if you have a GT500, the panels in the OP's Shelby GT will more than likely have a different finish ( black for the base interior or ribbed aluminum if he has IUP) as I am fairly sure your GT500 has what is called "Titanium" dash panels (which by the way are $115 new).
