Default pulleys

other than the UD Pulley, does anyone change the stock pulleys... AC/Alternator, etc, for performance? or do they not make a difference?

On V6s, only the crank pulley makes a noticible difference, but on GTs, you must change the crank, water pump, and alternator pulleys for maximum gains, efficiency, and to prevent charging issues.

is the crank pulley the same as the UD Pulley? if not where is the crank ?

Yes, an under drive pulley is any pulley that under drives the external accessories by reducing the size and weight of the pulley.
