I talked to some of the most reputable shops in a 100 mile radius, and they saying my mustang has 4 catalytic converters and even with an americanmuscle.com exhaust sytem it wont really have much noise :|

Is it okay if I just keep my exhaust the way it is? Cuz they sayin even with dual it won't sound much different and I can't justify spending 600$ just for cosmetic dual exhaust.
I rather get rear window louvers, is it okay if I keep single exhaust or will people look down on me?
I want some uniqueness, maybe I can be unique by keeping single exhaust and window louvers?
Also the thrush turbo muffler does sound a bit better than stock...a bit.

They aren't willing to - however the mechanic suggested I do a "muffler elimination"
Basically gonna remove the muffler and just put a piece of pipe for 100$, and he said it should sound really nice - what y'all think?

According to Title II of the EPA Clean Air Act (Enacted Jan 1 1988) there are multiple regulations concerning the use or misuse of aftermarket catalytic converters, or the removal and/or modification of a stock catalytic converter. According to various parts of Section 203, all aftermarket catalytic converters must be EPA certified, and your car must have a gas conversion device of some manner. If not, both you and the installer are punishable of a Federal Offense by Section 205 (a). The operator's fine can be no more than $2,500 and the installation agency no more than $25,000.

It sounds like you've been barking up the wrong tree.
Let me clarify some things for you.
First of all, exhaust shops honestly HATE installing aftermarket components on cars as they make little to no money off of the parts and can only make basic rates (due to competiton) on the install. As a result they will spew off a number of reasons as to why it won't work, how they don't have time, or just make the price so expensive it turns you away.
Secondly, the 94-04 V6s are 100% dual exhaust compatible. You just have to remove the y pipe and add in the duals. Plain and simple, nothing hard about it. This can be done a lot of different ways but generally speaking people just have the y pipe cut behind the cats and have the duals welded up from there. The down side to this is that the cats will restrict the sound and you won't get the full exhaust tone. Same thing happens on GTs, even with catback exhaust, if the car has the factory cats the car will be much milder than without.
Thirdly, the shop that told you to get the best sound you have to remove the cats is 100% correct. As I just said cats reduce exhaust flow (to a degree) which mellows out the exhaust tone. There are two ways to get around this. First way is to just remove the cats completely. However due to federal smog regulations this is illegal (per say) and a lot of shops won't do this, however look around and somebody will. The next way is to remove the rear set of cats (only 2 are needed) and have the fronts replaced with high flow cats. This won't get the same aggressive tone as no cats (aka off road) but will be much better than the factory 4 but does cots more than either option.
Lastly, you do not want to run a V6 dual exhaust y pipe kit. These kits flow no better than stock and generally have a very raspy/ricer tone. Also the shops quoting you $800-1000 are correct prices if, and only if they're offering very high end systems, like magnaflow catbacks with bassani x pipes. If it's just standard off the shelf stuff they're trying to rape you. The best thing you can do is arm yourself with knowledge, the more that you can show that you know, the less likely a shop will be to try to screw you over.
As far as finding a new car goes look outside your area and keep an eye out on craigslist. People that are asking stupid prices for GTs, especially older ones, are generally very uneducated and are very likely to have beat the crap out the car. Look for people that are more honest and that will negotiate on price. Just keep in mind that any car older than 10 years is gonna have wear on it, so it's just a trade off as to how much is acceptable to you. A 94/95 should never sell above $5000 unless it's still in the factory wrapping from 94/95. Also try to find a car that's as near stock as possible. Modded cars are always a risky investment and keep in mind mods DO NOT raise the value of a car, if anything they can damage the value because it passes on great risk to potential buyers. Keep to KBB or Edmunds for real world book values. Remember these are just values. A car is only worth as much as somebody will actually pay for it.

god damn it! the shop now saying with v6 can't really get a good sound unless u get cats removed or a good exhaust system which will cost ~800$ with installation.

why the hell is a 95 gt with 150k miles worth 8 thousand dollars??? that is the cheapest GT in my area and it has a messed up back bumper!!!
I can't take this anymore, i put so much money into my 6 and now its useless, nobody liked it and girls probably just think im a loser. its freaking unfair as hell, unless ur a millionaire we might as well just drive civics - im not surprised one bit rick warrens son killed himself.

Anyway, I bought the MAC Catback Exhaust which splits the Y Pipe into duals (but doesn't really add HP). It gave me a nice rumble (trust me) at the start up. The car sounded AMAZING when it hit 2500-3000K.
It was the cheapest and best catback I've bought for a car. After that I decided to get rid of the Y's and ask a shop to customize an H Pipe for me. It sounds much louder, and nicer. Don't sweat it man
Relax, and take your time. If you're really really pissed off, and you just don't want to do anymore work to the V6 then try and find a GT at least 20 miles away from you because there is bound to be one out there.
Me? I'll just keep the V6, and stay with a build. I like building and modifying the engine
