I guess if this post I turned up with the search function is true, then it answers my question.

Granny mode is a fuel saver mode our cars go into after a few days of casual driving. It is characterized by throttle lag and noticeable drop in torque in first and second gear for me. A trick to try is to turn you key to accessories and wait for car to finish running all it start-up diagnostics. do not start the car though. Press you gas pedal all the way to the floor slowly. remove key from ignition. wait 10 seconds. Start your car. After I do this, I seem to get a lot more power in first and second and my throttle lag goes away. I could be wrong about the added torque, but throttle lag definately disappears. I was told this trick re-calibrates your throttle sensor but I don't know if that is true or not.

Looks like there would be a way to turn it off without having to purchase a tune. Could the techs at Ford do it?
