Does bolt pattern or offset matter?

Question Does bolt pattern or offset matter?

The rims I want are:
Size: 20x8.5
Bolt Pattern: 5x114.3
Offset: 35

The tires I want are:
255/35-20

They say they best fit 20 x 8.5 Inch 2005+ Wheels

Although the site looks like it sells rims for trucks should I be alright as long as the size matches or does the bolt pattern and offset have anything to do with anything?

And second I want to add 2.5" caps to these rims and I've read it's just pop off and on (after removing the entire wheel/tire from the car which isn't a problem for me as I'll do it prior to adding). Is there anyway to tell what size cap the rims use?

as long as the bolt pattern and backspacing are good, you should be ok.

The off-set/back-spacing on those wheels will be just fine for an '05+ ride.

As for centercaps, this can be a little tricky. The hole in the wheel will dictate the diameter of the cap as well as fitment. That is to say, the cap the wheel comes with is going to NEED to be reinstalled, in nearly all cases. You will very likely be able to purchase other caps and peel the face off and glue them onto the caps of your new wheels. I did this with mine and are just fine.
