You want to use "Engine Coolant Temperature".
There is no "one size fits all" IAT temperature. My IAT's are higher than a N/A car because I am squeezing the air quite a bit even when not in boost. Rule of thumb is you do not want an IAT over 130 degrees because the computer will start pulling timing out of the engine. But obviously, the cooler your IAT is, the better.

Problem solved: There are dash/windshield holders for smartphones and tablets.
OBD-II adaptor and software on a smartphone/tablet is far easier visually and cheaper. As many gauges as can fit on the screen; multiple screens; swipe through screens. And there is a HUD setting and you throw it up on the dash.
You can even record multiple PIDs and superimpose them over video you took at the track so you can see everything your car was doing as you were driving it.
You can run diagnostics, clear trouble codes, see if your car is ready for emissions, view all PIDs for your car, datalog, graph data points....
Or you can get a tiny little aeroforce gauge and the kits required for hundreds more that you have to scroll through two data points at a time and cannot do these things I previously mentioned.
