Tire width in the rear only matters 50%. The real question is the offset of the wheel.
18x10 with a 298/35/18 will keep stock diameter and fill the gap well. Actual width will vary with brand. I'm a big fan of BFG just because they run much wider compared to brands like Nitto (as an example, BFG's 295 is physically wider than Nitto's 305).
I run 295 width on my 18x10s with no rubbing issues at all. If you do need a good 1" spacer, Steeda sells them for $100 a pair.

I have a set of Saleen Rims on mine although they are not Chrome. I have not lowered the car any yet (eventually plan 1 & 1.5 inch lowering) but for now I love my Saleens, I may look into a different tire considering how poorly the Nitto P555 handles in the rain though.
