Stroker or not
I am in two minds whether to get a stroker kit for the 351c - One part of me says keep it to 351, get 6" rods and different pistons - the other half says stroke it to 383, what are the pros and cons of stroking? Lower rev limit? Shorter engine life?

It'll reduce engine life, but if you use good parts it prolly won't reduce engine life enough for it to matter. It only becomes a problem when you start stroking a block to the maximum and getting crappy rod ratios. You can make plenty of power with just a 351, more than you'd be able to find traction for on the street, and the mileage would be a bit better. A 377/383 or whatever is available that's not a really long stroker setup would be nice.
As far as rev limit, that really depends on the parts, but strokers make power at lower rpms, so you don't need to rev as much.
