You don't. Numbers matching is a term that is thrown around by people more familiar with Chevy products.
65/6 the only thing you could do to even approach truthfully saying something is all numbers matching would be to look at the casting date on every part of the car and validate that they fell within a couple months of when you believe the car was manufactured.

No such thing, really. Unless it was a K code car and you're lucky enough to have a partial VIN stamp on the motor, the best you're going to get is 'date code correct.' The date code on the engine/tranny should be, ideally, a couple months before the build date of the car (decipherable from the VIN). Although sometimes this is even incorrect, as it wasn't unheard of for an older engine that was stashed in the back of a warehouse to make it into a car on the assembly line.
