As far as the HP you are making will depend a lot on the tune. I don't know much about engines but I think 210 cc head runner volume is a bit much for a 302 unless you plan on a whole lot of rpms. I have 3.89's with a T5z in a similar setup on 25.5" tall tires. I am making less hp than you and I get through the gears quickly. The more torque you have the shorter(think smaller number) the gear ratio you can run 'cause the engine can pull it.

Your tire size may help you choose your rear gear ratio. For me 3.89 gears would be my limit with my current set up or a set up with a little more power. A lot more power and I would want 3.70's.

Based on your post, I would recommend 3.89's.
