Is ford paying for your repaint or not? If they are I doubt they are going to want to do any extra work. Are you changing the color of your stang to the grabber orange?
As for the paint, I am told that its just black base coat with matte/satin clear to give it the "flat" look.
Actual flat black paint is old school enamel and would absorb dirt and deteriorate anyway. Paint today is urethane base coat with urethane clear coats on top. Therefore flat/matte black and gloss black are the same base.
I believe the code for ford black base coat is UA but I dont know about the matte/satin clear coat. You should ask whoever is doing the painting.
I think a better choice than painting the black on the hood is to get the decals and have the body shop put them on for you. You will then be able to remove them in the future if you decide to change your theme. The decals will hold up fine and they are what the mfr uses on all cars regardless of make.

There is also "hot rod flatz" preflattened and ready to spray paint. Pretty much the same as the Du Pont Hot Hues "hot rod black" promoted by hootna. You can check it out at tcpglobal.com.
Also, PPG makes a clear coat called "DCU 2060 flexed and flat." Depending on the finish you are looking for, satin, matte, gloss, semi-gloss, depends on how you mix it. The base coat would then be just a black base.
